Welcome back to another delicious recipe. Today, we're turning simple baking ingredients into an elegant, bakery-style treat: Strawberry Swirl Supreme Cupcakes. Fluffy vanilla cupcakes are swirled with vibrant strawberry puree, then topped with a silky strawberry-infused frosting that melts in your mouth.
Each bite delivers a burst of real berry flavour, with a beautiful pink swirl that makes these cupcakes as stunning as they are delicious. They look sophisticated, but they're surprisingly simple to prepare at home.

Ingredients

For the Strawberry Puree
- 250 g fresh strawberries, hulled and chopped
- 2 tbsp granulated sugar
- 1 tsp fresh lemon juice
For the Cupcake Batter
- 180 g all-purpose flour
- 1½ tsp baking powder
- ¼ tsp salt
- 115 g unsalted butter, softened
- 200 g granulated sugar
- 2 large eggs, at room temperature
- 1 tsp vanilla extract
- 120 ml whole milk, at room temperature
- 3 tbsp strawberry puree (from above)
For the Strawberry Swirl Frosting
- 230 g unsalted butter, softened
- 480 g icing sugar (powdered sugar)
- 4–5 tbsp strawberry puree (from above)
- 1 tsp vanilla extract
- Pinch of salt
- Fresh strawberries and mint leaves for garnish (optional)

How to Make

1. Make the Strawberry Puree
Place the chopped strawberries, sugar and lemon juice in a small saucepan over medium heat. Cook for about 5–7 minutes, stirring occasionally, until the strawberries break down and become saucy.
Remove from heat and allow to cool completely. Once cooled, blend until smooth using a food processor or immersion blender. Set aside. You should have roughly ½ cup (120 ml) of puree.
2. Prepare the Cupcake Batter
Preheat your oven to 175°C (350°F). Line a 12-cup muffin tin with paper liners. In a medium bowl, whisk together the flour, baking powder and salt. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy—about 2–3 minutes.
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the flour mixture. Mix until just combined—do not overmix.
3. Create the Strawberry Swirl
Spoon the batter evenly into the prepared cupcake liners, filling each about ⅔ full.
Add 1 teaspoon of strawberry puree to the center of each cupcake. Use a toothpick or small skewer to gently swirl the puree into the batter, creating a marbled effect. Do not over-swirl—you want distinct ribbons of strawberry running through each cupcake.
4. Bake the Cupcakes
Bake for 18–22 minutes, or until a toothpick inserted into the centre comes out clean (with a few moist crumbs). Allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely before frosting.
5. Make the Strawberry Swirl Frosting
In a large bowl, beat the softened butter until creamy and smooth—about 2 minutes. Gradually add the icing sugar, about 1 cup at a time, beating well after each addition.
Add 4 tablespoons of strawberry puree, vanilla extract and a pinch of salt. Beat on medium-high speed for 3–4 minutes until the frosting is light, fluffy and beautifully pink. If the frosting is too thick, add the remaining 1 tablespoon of puree. If it's too thin, add a little more icing sugar.
6. Frost and Decorate
Transfer the frosting to a piping bag fitted with your favourite tip (a star tip works beautifully). Pipe generous swirls onto each cooled cupcake. For an elegant finish, top each cupcake with a fresh strawberry slice and a small sprig of mint.

Plating

Arrange the Strawberry Swirl Supreme Cupcakes on a beautiful cake stand or serving platter. The pink swirls peeking through the golden cake and the luscious strawberry frosting create a stunning visual contrast.
For an extra touch of elegance, dust lightly with icing sugar or add a few edible flower petals. Serve alongside a glass of cold milk, a cup of tea or even a chilled glass of rosé for an afternoon treat.
