A homemade apple pie is a comforting dessert that brings together soft, warmly spiced fruit and a golden pastry crust. This deep-filled version adds a generous layer of streusel on top, giving every slice a pleasant contrast of textures.
The apples become tender as they bake, while the crumbly topping develops a lightly crisp finish. It is a lovely choice for a family dessert, an afternoon treat, or a special meal when you want something sweet and familiar.
Ingredients You Will Need
For the pastry:
250 g plain flour
125 g cold unsalted butter, cubed
50 g caster sugar
1 egg yolk
2–3 tablespoons cold water
For the apple filling:
1.2 kg apples, peeled, cored, and sliced
100 g light brown sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1 tablespoon plain flour
1 teaspoon vanilla extract
For the streusel topping:
150 g plain flour
100 g cold unsalted butter, cubed
75 g light brown sugar
½ teaspoon ground cinnamon
Preparation and Cooking Instructions
1. Prepare the pastry. Mix the flour and caster sugar in a large bowl. Add the cold butter and rub it into the dry ingredients with your fingertips until the mixture resembles fine crumbs. Stir in the egg yolk, then gradually add the cold water until the dough starts to come together. Shape it into a flat disc, wrap it, and refrigerate for 30 minutes.
2. Line the pie tin. Lightly flour your work surface and roll out the chilled dough. Transfer it to a deep pie tin, gently pressing it across the base and sides. Trim away any excess pastry and place the tin back in the refrigerator while you prepare the filling.
3. Mix the apples. Put the sliced apples in a large bowl and toss them with the lemon juice. Add the brown sugar, cinnamon, flour, and vanilla extract. Stir until the fruit is evenly coated. The flour helps absorb some of the juices released during baking, keeping the filling moist without becoming too runny.
4. Make the streusel. In a separate bowl, combine the flour, brown sugar, and cinnamon. Add the cold butter and rub it into the mixture until coarse crumbs form. Keep some larger clusters for a more textured topping. If the butter begins to soften, refrigerate the mixture briefly.
5. Fill the pastry shell. Remove the prepared tin from the refrigerator and spoon the apple mixture into it. Spread the fruit evenly, filling the shell without leaving large gaps. Distribute the apples carefully so the filling cooks consistently.
6. Add the topping. Scatter the streusel over the apples, covering the surface from edge to edge. Avoid pressing the crumbs down firmly, as keeping them loose helps the topping develop a crisp, uneven texture.
7. Bake the pie. Preheat the oven to 180°C (160°C fan). Place the pie on a baking tray to catch any juices that bubble over, then bake for approximately 50–65 minutes. The topping should be golden, and the apples should be tender. If the surface browns too quickly, loosely cover it with foil for the remaining baking time.
8. Cool before serving. Remove the pie from the oven and leave it to rest for at least 30–45 minutes. This allows the filling to settle and makes portions easier to serve without losing too much juice.
Tips for a Delicious Result
Choose firm apples. A mixture of sweet and tart varieties provides balanced flavor. Firmer fruit is also more likely to retain some texture after baking. Keep the butter cold. Chilled butter helps create a crumbly topping and a tender pastry base. Work quickly when mixing, particularly in a warm kitchen. Adjust the sweetness. Taste your apples before preparing the filling. If they are naturally sweet, you can reduce the sugar slightly without losing the fruit's flavor.
Serving and Storage
Once completely cool, cover leftovers and refrigerate them. For the best quality, enjoy within three days. Reheat individual portions in the oven until warmed through; this can help restore some crispness to the topping.
Deep-filled apple streusel pie brings together tender fruit, delicate pastry, and a golden, buttery crumble in one inviting dessert. Serve it for a family gathering or a relaxed afternoon treat, and enjoy the simple pleasure of a homemade fruit pie.
